In the center of the prepared quesadilla add some of the ground beef, top with some of the cilantro-lime rice. Add a little bit of the chipotle sauce and sour cream. Roll up the burritos by folding the corners towards the center and then grabbing the bottom and rolling up. Repeat this process with the remaining tortillas and cheese.
To cook them in the pan— spray a large skillet with cooking spray and heat the skillet to medium-high heat. Place the wraps into the skillet seam-side down and cook until golden brown and crisp on the bottom, turn over and cook until golden brown on the other side (about 2-3 minutes per side).
This is a great recipe if you are looking for a tutorial on how to make a quesarito. The quesarito started as a secret menu item at Chipotle and was later added as a regular menu item at Taco Bell. This recipe is more like the one you would find at Taco Bell as far as the ingredients go but it could be adapted as a copycat recipe for either restaurant. The quesarito is basically a quesadilla that is wrapped up into a burrito. This burrito is stuffed with taco meat, cilantro-lime rice, chipotle sauce, and sour cream. The best way that I found to prepare the quesadilla is to microwave the cheese between two tortillas wrapped in paper towels. Once the tortillas come out of the microwave, the cheese is melted and the tortillas are soft and easy to roll into a burrito. The burritos can be browned in the pan but that is totally optional. There is a lot of work involved in this recipe but you can save time by using things such as packaged taco seasoning. Enjoy.

You will want to plan ahead for this recipe because the dough needs to be chilled for at least 4 hours before preparing the cookies for baking. The filling is simply raspberry jam but you can use other flavors as well—I used raspberry, apricot, and blackberry. The Alabama smokehouse burger consists of a grilled seasoning pork patty, provolone cheese, bacon, Alabama white barbecue sauce, and iceberg lettuce. The Alabama white sauce really adds a nice flavor to this amazing burger. The BBQ sauce is a combination of mayonnaise, vinegar, lemon juice, sugar, and pepper. The ground pork is mixed with seasonings such as smoked paprika, chili powder and cayenne pepper for a little bit of heat. The original recipe called for smoked Gouda but I used sliced provolone instead. These burgers are best cooked on an outdoor grill but could be pan-fried if needed.
