Chicken and Black Bean Taco Salad Recipe

Chicken and Black Bean Taco Salad
This chicken and black bean taco salad is a healthy alternative to using ground beef. The chicken is cooked in the slow cooker with salsa, taco seasoning, cumin, and black beans and then shredded. The shredded chicken is placed over a bed of shredded romaine lettuce and topped off with cheese and cilantro-cilantro dressing. The dressing gets a lot of its flavor from avocado, cilantro, buttermilk, garlic, and lime juice. You could also prepare tacos or burritos instead of making a salad if you would prefer. Enjoy.

Denver Omelet Recipe

Denver Omelet
The Denver omelet is perfect to prepare for breakfast. This omelet consists of cooked ham, green pepper, onion and cheese. There is some debate about if a Denver Omelet has cheese in it but I had to put it in mine. This recipe is enough to make one omelet but the ingredients can easily be doubled or tripled to make more. Guacamole Chicken Burgers
Guacamole chicken burgers go great on the grill or in a frying pan. The chicken burgers have sort of a taco flavor to them, are topped with cheddar cheese, cilantro, and guacamole. A lot of the flavor in the chicken burgers comes from cilantro, garlic, lime juice, paprika, and cumin. The shredded cheddar cheese is an important ingredient and helps to keep the burgers from becoming dry. For the guacamole, you can save time by buying it premade from the store. How to Make a Quesarito

se on top of the tortillas. Place another tortilla on top of the cheese. Place a damp paper towel on top. Place into the microwave and cook for 30 seconds to 1 minute or until the cheese has melted.

In the center of the prepared quesadilla add some of the ground beef, top with some of the cilantro-lime rice. Add a little bit of the chipotle sauce and sour cream. Roll up the burritos by folding the corners towards the center and then grabbing the bottom and rolling up. Repeat this process with the remaining tortillas and cheese.

To cook them in the pan— spray a large skillet with cooking spray and heat the skillet to medium-high heat. Place the wraps into the skillet seam-side down and cook until golden brown and crisp on the bottom, turn over and cook until golden brown on the other side (about 2-3 minutes per side).

How to Make a Quesarito
This is a great recipe if you are looking for a tutorial on how to make a quesarito. The quesarito started as a secret menu item at Chipotle and was later added as a regular menu item at Taco Bell. This recipe is more like the one you would find at Taco Bell as far as the ingredients go but it could be adapted as a copycat recipe for either restaurant. The quesarito is basically a quesadilla that is wrapped up into a burrito. This burrito is stuffed with taco meat, cilantro-lime rice, chipotle sauce, and sour cream. The best way that I found to prepare the quesadilla is to microwave the cheese between two tortillas wrapped in paper towels. Once the tortillas come out of the microwave, the cheese is melted and the tortillas are soft and easy to roll into a burrito. The burritos can be browned in the pan but that is totally optional. There is a lot of work involved in this recipe but you can save time by using things such as packaged taco seasoning. Enjoy.

You can use a glass to make the hole in the beef patty or try using a spoon or butter knife, you will want to be careful when you are doing this to hold the shape of the burger patty. Almond Thumbprint Cookies
These almond thumbprint cookies are great to prepare for Christmas! There are three parts to this recipe- the dough, the filling, and the glaze. You will want to plan ahead for this recipe because the dough needs to be chilled for at least 4 hours before preparing the cookies for baking. You can prepare the dough the night before and make the cookies in the morning if you wish. The filling is simply raspberry jam but you can use other flavors as well—I used raspberry, apricot, and blackberry. The glaze is a combination of confectioners’ sugar, milk, and vanilla or almond extract. Enjoy.

Burgers with Romaine Slaw
These burgers with romaine slaw are great to prepare for dinner. You can either make these burgers into full hamburgers or into several little sliders. The burgers are topped off with cheddar cheese. I cooked the burgers on a griddle and toasted the buns as well. What makes this recipe so special is the romaine slaw. The romaine slaw gets a lot of its flavor from mayonnaise, Dijon mustard, pickles, and pickle juice. The slaw is prepared by combining sliced romaine lettuce with a dressing in a bowl. BBQ Cheddar Stuffed Meatballs Recipe

BBQ Cheddar Stuffed Meatballs
These BBQ cheddar stuffed meatballs are a very delicious dinner to prepare. These meatballs use ingredients such as ground beef, breadcrumbs, egg, milk onion, and garlic. The meat mixture is formed and then cubes of cheddar cheese are pressed into the center of the meatballs. Try and form the meat mixture around the cheese chunks as well as possible to avoid leaks. Chances are some of the cheese will leak out but you don’t want it all too. These meatballs are fully cooked in the oven, no pan-frying is required. The BBQ sauce is homemade and uses common ingredients which you may already have on hand. I like to serve these meatballs with macaroni and cheese. Enjoy.

Sausage and Herb Stuffing
If you are looking for a delicious stuffing recipe for the holidays, this one is perfect. I prepared this sausage and herb stuffing for Thanksgiving this year and it was a big hit. What makes this stuffing so amazing is the use of fresh herbs such as sage, rosemary and parsley and the use of sweet Italian sausage. This recipe uses pre-made stuffing cubes to help save time and makes this dish easy to prepare. Onions, garlic, and celery are sautéed in butter and then added to the bread cubes along with various ingredients. The sausage is cooked in the same skillet as the celery and onion mixture. Once the ingredients are mixed with the stuffing cubes, the dish is placed into the oven and baked until golden brown on top. The top of the casserole should be brown and crunchy. Enjoy.

KFC Coleslaw Recipe

KFC Coleslaw
One of the best side dishes at KFC is their coleslaw. With this recipe, you can make your own KFC coleslaw right at home. Not only is this a great copycat recipe but it is perhaps one of the better coleslaws that I have tasted. A lot of the flavor comes from white vinegar, lemon juice, mayonnaise, and buttermilk. For the carrots, I used a cheese grater to shred them but you could also use a knife and slice them into very thin strips. For the best results, you will want to allow the coleslaw to be refrigerated for several hours or overnight to allow the flavor to develop before serving. This coleslaw makes a great side-dish. Enjoy.

Alabama Smokehouse Burger
The Alabama smokehouse burger consists of a grilled seasoning pork patty, provolone cheese, bacon, Alabama white barbecue sauce, and iceberg lettuce. The Alabama white sauce really adds a nice flavor to this amazing burger. The BBQ sauce is a combination of mayonnaise, vinegar, lemon juice, sugar, and pepper. Mozzarella Stuffed Meatballs Recipe

Mozzarella Stuffed Meatballs
Meatballs get even better when they are stuffed with mozzarella cheese. The meatballs are cooked in the slow cooker right in the spaghetti sauce. You can use either your favorite brand of sauce or even make your own. The meatballs use two different types of meat—spicy Italian sausage and ground beef. I really like the flavor that the Italian sausage adds to this recipe. Try to form the ground beef mixture as well as you can around the cheese cubes so that it does not leak out while cooking. However, it is normal for some of the cheese to come out. I like to serve these meatballs with spaghetti noodles. Enjoy.

Pumpkin French Toast Recipe

Pumpkin French Toast
Pumpkin French toast makes a great breakfast for the colder months and the holidays. This is very similar to classic French toast but uses ingredients such as pumpkin puree and pumpkin pie seasoning to make the French toast taste like a pumpkin pie! I like to use Texas toast for this recipe but you could use sliced French bread as well. You can use either a nonstick skillet or a griddle for this recipe. I prefer a griddle because I can cook several pieces of the toast at ounce. Once the French toast is cooked I like to top it off with a little maple syrup and whipped cream. Enjoy.

Doritos Chicken Bites Recipe

Doritos Chicken Bites
The use of Doritos chips makes a great breading for chicken bites. The Doritos chips are put into a food processor and blended until they are very fine crumbs. If you do not have a food processor, try and crush the chips as finely as possible. The chicken pieces are first rolled in flour, then dipped in egg and then rolled in the Doritos. These chicken bites are baked in the oven so there is no need for a deep-fryer. I like to serve these Doritos chicken bites with ranch dressing. Enjoy.
