The cheesy grodita crunch is possibly one of the best items offered at Taco Bell. The secret to this amazing gordita is the slightly spicy sauce. The sauce uses ingredients such as red bell pepper, jalapeno pepper, and vinegar to get most of its flavor. This copycat recipe for Taco Bell’s cheesy gordita crunch is very easy to prepare. The gordita shell is topped with Mexican cheese blend, pressed onto a taco shell and then filled with ingredients such as taco meat, a spicy sauce, romaine lettuce, and shredded cheddar cheese. If you want to make this a bit healthier try replacing the ground beef with ground turkey. You can also replace the mayonnaise in the sauce with Greek yogurt. The gordita shells may be hard to find. You can replace them with pita bread or a thicker flour tortilla. Enjoy.

The amounts of the seasoning can easily be doubled or tripled if you want to make large batches to store for future use. The ingredients of a fajita go perfect on top of a pizza crust. This recipe was originally for a grilled steak fajita pizza but I decided to make it on the oven instead. This pizza is topped with a spicy tomato sauce, Mexican cheese blend, seasoned steak, red onion, poblano peppers and cilantro. The spicy tomato sauce is a simple combination of diced tomatoes, oregano, salt, pepper, and chili powder. You can cook the steak according to the method of your choice. You could leave the steak whole, season it, grill it and then slice it. What I did was first sliced the steak into thin strips, then seasoned it and fried it in the pan. You can also sauté the pepper and onions in a little olive oil if you would prefer instead of putting them on the pizza raw. Enjoy.

This chili con queso pasta bake combines Mexican ingredients with penne pasta and hamburger in a casserole dish. This is sort of like a macaroni and cheese recipe. The noodles are mixed with a cheese and tomato sauce. I really enjoyed the flavor that the fire roasted tomatoes added to this recipe. The dish gets additional flavor from seasonings such as ground coriander, garlic, cumin, and chili powder. You can use other types of pasta as well if you do not have any penne—ziti or elbow macaroni are good options. Enjoy.

The Royal Red Robin burger from the restaurant Red Robin is one of my favorite burgers to order. This burger is topped with American cheese, lettuce, onion, bacon, a fried egg, and mayonnaise. The fried egg is what really makes this burger special. This burger is best grilled but if you do not have an outdoor grill, it could be cooked in a skillet as well. I have read about the California burrito for a while now and I finally had decided to give it a try. I have never had one of these burritos in California so I cannot comment on how authentic this r recipe is. If you are unfamiliar with these burritos—California burritos consist of carne asada steak, cheese, French fries, and guacamole rolled up into a tortilla. If you are not a guacamole fan, you can leave it out if you would prefer. What really makes these burritos unique is the French fries. The French fries add a unique texture and flavor to these burritos that I have never experienced before. I used steak fries but several other types of French fries will work as well. The steak can either be grilled, broiled or cooked on the stovetop. If you are looking to try a different type of burrito, give this one a try. Enjoy.

The hardest part about this recipe is wrapping the tortilla around all of the ingredients. There are a lot of different ways you can alter this recipe—basically any ingredients that you enjoy on tacos can go inside the crunchwrap. This is a copycat right for the provolone stuffed meatballs at Applebee’s restaurant. The meatballs are simmered in marinara sauce and then placed on top of alfredo noodles to serve. I thought the combination of both alfredo and marinara sauce kind of creates a flavor that is similar to a tomato cream sauce. The meatballs use 3 different types of meats—ground beef, ground pork and ground veal. If you would prefer you can use all ground beef. If you do not want to brown the meatballs in the pan you can brown them in the oven at 350 degrees F. and then finish them in the sauce. You could also fully cook them in the oven if you want. It should take about 25-30 minutes to bake them at 350 degrees F. Make sure that the internal temperature has reached 160 degrees F. before removing them from the oven. Serve with garlic bread. Enjoy.
