    Shrimp Tacos
If you are looking for a delicious shrimp taco recipe for Lent, look no further. These shrimp tacos are delicious and loaded with seasoned shrimp, cilantro-lime slaw, and queso fresco cheese. The shrimp are cooked in the pan with various seasonings such as chili powder, cumin, salt, and cayenne pepper. A fresh squeeze of lime juice really adds a little flavor to the tacos as well. I like queso fresco but you could use many different types of cheese for this recipe such as cojita, Monterey Jack or a Mexican cheese blend. Enjoy.

The chicken is cut into small chunks and then coated first in flour, then dipped in egg and then rolled in crushed pretzels. The best part about this recipe, the chicken is baked and not fried! The pretzels may be a little difficult to crush. A good option would be to crush them with a rolling pin. You can also use a food processor or blender to break them up into fine chunks. I used the blender to crush them but I made sure not to blend too much because I wanted some pieces of pretzel left and not just fine crumbs. These chicken bites go great served with honey-mustard dipping sauce. Enjoy.

You will want to plan ahead for this recipe because the dough needs to be chilled for at least 4 hours before preparing the cookies for baking. You can prepare the dough the night before and make the cookies in the morning if you wish. The filling is simply raspberry jam but you can use other flavors as well—I used raspberry, apricot, and blackberry. The glaze is a combination of confectioners’ sugar, milk, and vanilla or almond extract. Enjoy.

These meatballs use ingredients such as ground beef, breadcrumbs, egg, milk onion, and garlic. The meat mixture is formed and then cubes of cheddar cheese are pressed into the center of the meatballs. Try and form the meat mixture around the cheese chunks as well as possible to avoid leaks. Chances are some of the cheese will leak out but you don’t want it all too. These meatballs are fully cooked in the oven, no pan-frying is required. The BBQ sauce is homemade and uses common ingredients which you may already have on hand. I like to serve these meatballs with macaroni and cheese. Enjoy.

I prepared this sausage and herb stuffing for Thanksgiving this year and it was a big hit. What makes this stuffing so amazing is the use of fresh herbs such as sage, rosemary and parsley and the use of sweet Italian sausage. This recipe uses pre-made stuffing cubes to help save time and makes this dish easy to prepare. Onions, garlic, and celery are sautéed in butter and then added to the bread cubes along with various ingredients. The sausage is cooked in the same skillet as the celery and onion mixture. Once the ingredients are mixed with the stuffing cubes, the dish is placed into the oven and baked until golden brown on top. The top of the casserole should be brown and crunchy. Enjoy.

One of the best side dishes at KFC is their coleslaw. With this recipe, you can make your own KFC coleslaw right at home. Not only is this a great copycat recipe but it is perhaps one of the better coleslaws that I have tasted. A lot of the flavor comes from white vinegar, lemon juice, mayonnaise, and buttermilk. For the carrots, I used a cheese grater to shred them but you could also use a knife and slice them into very thin strips. For the best results, you will want to allow the coleslaw to be refrigerated for several hours or overnight to allow the flavor to develop before serving. This coleslaw makes a great side-dish. Enjoy.

                                                              Street Tacos
These are steak tacos just like you can find from a food truck on the street. These tacos include carne asada steak, queso fresco cheese, onion and cilantro. A squeeze of fresh lime juice on each taco before serving really helps to create an amazing flavor. The steak is marinated in ingredients such as lime juice, orange juice, cilantro and garlic. The best way to cook the steak is on an outdoor grill but you could use a skillet as well. You can use either corn or flour tortillas for this recipe. I also like to put hot sauce on these tacos for serving. Enjoy.

Here is a recipe for the Chipotle southwest sauce from Subway restaurant. This sauce is one of my favorites to get on several of their subs. What is great about this recipe is that it mostly uses ingredients you probably already have on hand. To prepare the sauce simply mix all of the ingredients in a bowl and place into the refrigerator for an hour before using. This sauce goes great on sandwiches and wraps. The sandwich in the picture has pit ham, oven roasted turkey, bacon, provolone cheese, lettuce and pickles. Enjoy.Read More »Subway chipotle southwest sauce recipe

The pork chops are first dipped in spicy brown mustard and egg beaters then rolled in a seasoned breadcrumb mixture. Once the pork chops are breaded they are fried in a little bit of oil. What I like about this recipe is how easy it is to prepare—it will be on the table in no time. I served these pork chops with mac and cheese on the side. Enjoy.

Instead of using a hot dog, this recipe uses a fried chicken strip. The fried chicken strips are placed into a hot dog bun on top of bacon and topped with cheese and a honey mustard sauce. You can either bake the chicken strips or fry them in the deep-fryer. Using frozen chicken strips helps to save time. If you want to save additional time using pre-cooked bacon would be a good option. You can serve these southern bird dogs with French fries. Enjoy.

French bread is spread with a garlic and butter mixture and then topped off with pizza ingredients such as sauce, cheese and pepperoni. I like to slice the French bread in half or cut the French bread into individual slices. If you want to put a little extra work in you can even make your own pizza sauce. This recipe can also be served as an appetizer. Enjoy.

The ground beef is cooked in the pan with taco seasoning. If you want you can make your own copycat Taco Bell Taco Seasoning. The potatoes are sliced into chunks and fried in a bit of oil until crispy on the outside. After the burritos are rolled up they are toasted on both sides in the pan to make them a little crispy. The combination of the nacho cheese and sour cream really helps to add a good amount of flavor to this recipe. If you enjoy the cheesy potato burrito from Taco Bell, give this one a try. Enjoy!

This grilled chicken with watermelon salsa is absolutely delicious. The chicken is marinated in a few very simple ingredients such as soy sauce, garlic, and honey. I usually allow the chicken to marinate for about 2-3 hours. Once the chicken is done marinating it is grilled and then topped with fresh watermelon salsa. The salsa is a combination of watermelon, cucumber, jalapeno pepper, cilantro, and green onion. The salsa is seasoned with salt, pepper and lime juice. I like to serve this chicken with a cold salad on the side. Enjoy.

The meatballs are also a healthy alternative to meatballs with more traditional ingredients such as breadcrumbs and parmesan cheese. This recipe uses ingredients for the meatballs such as ground turkey, grated zucchini and onion, and garlic. There is also a homemade sauce that goes with this dish. The sauce is tomato based and gets a lot of its flavor from Italian seasoning. To add a little bit of heat to the sauce, a small amount of crushed red pepper flakes are used. You can serve this recipe with pasta or just serve the meatballs with the sauce. Enjoy.

Fast food can often be disappointing and you can make a much more flavorful burger right at home. This burger consists of a beef patty topped with white cheddar cheese and caramelized onions. You can cook the burger on a griddle or in a pan. If you want you can also grill the burgers on an outdoor grill. The onions are cooked in the frying pan until slightly browned. I like to serve these burgers with French fries. Enjoy.

This recipe can be used as a grilling glaze, a marinade or both. The glaze consists of only 4 ingredients—Dijon mustard, apple cider, Worcestershire sauce, and brown sugar. The pork chops can be marinated in a sealable plastic bag or a bowl that can be covered. If you are using the sauce as a glaze only, just combine all of the ingredients in a bowl and brush the pork chops frequently on both sides while grilling. I like to serve these pork chops with a cold salad on the side. The cold salad pictured in this recipe is pepperoni pasta salad. Enjoy.

This dish consists of marinated grilled chicken that is topped with a slightly spicy sauce, cheese, and Pico de Gallo. The chicken is marinated in ingredients such as teriyaki sauce and lime juice. The sauce gets a lot of its flavor from salsa, hot sauce, and Cajun seasoning. You can use less Cajun seasoning if you are not a fan of spicy foods. The Pico de Gallo is just a simple combination of tomatoes, red onion, jalapeno pepper, salt and lime juice. The best method to cook the chicken is on an outdoor grill but an indoor grill pan will work as well. You can serve this recipe with tortilla chips and rice. Enjoy.

You can either use boneless or bone-in pork chops for this recipe. The glaze has an amazing flavor and is brushed on the chops while grilling. The glaze gets a lot of its flavor from maple syrup, honey, and spicy brown mustard. The pork chops are first seasoned with salt and pepper and then placed onto the grill and brushed with the glaze. The combination of chicken, pizza sauce, cheese, and pepperoni is delicious. You can use your favorite brand of pizza sauce for this recipe or even make your own. The most work that is involved is breading the chicken. The chicken is baked in the oven but you can fry it in about ½ inch of oil in a large skillet first and then bake it if you would prefer. This recipe is for a Jamaican jerk spice rub. A lot of the flavor in this rub comes from seasonings such as allspice, nutmeg, cinnamon and cloves but there are several spices that come together to make this rub delicious. The best part is, chances are you already have all or most of these spices on hand. The use of cayenne pepper helps to add a little bit of heat to this mixture and you can adjust it to your taste if you wish. This rub goes great on chicken, pork or shrimp. The photos in the recipe display this seasoning mixture on grilled chicken breasts topped with mango salsa. Enjoy.

I cooked the hot dogs on an indoor grill pan but an outdoor grill would be even better. The hot dogs are loaded with a sauce, Frito chips, chopped tomato and shredded cheese. The sauce is a combination of canned chili, chopped green chili peppers and cheddar cheese soup. I like to serve these hot dogs with French fries. Enjoy.

Unfortunately, living in the Upper Peninsula of Michigan, we do not have a Chick-fil-A around here so I cannot comment on how close this recipe is to the actual dish. The chicken is first marinated in a mixture of dill pickle juice and milk, then dipped in egg and milk and then breaded in a flour mixture. The chicken nuggets can be cooked in the pan or fried in the deep-fryer. They are served with a homemade honey mustard sauce which is a combination of mayonnaise, yellow mustard, Dijon mustard, and lemon juice. Enjoy.

The Bonzai burger is a teriyaki-glazed beef patty that is grilled and topped with cheddar cheese, tomato, pineapple, and lettuce. I really enjoy the flavor combination of the teriyaki sauce and the pineapple ring. You can either use an outdoor grill or an indoor grill pan for this recipe. For the teriyaki sauce, you can use your favorite brand from the store to make your own. This is a great recipe for summer outdoor grilling. Enjoy.

The combination of chorizo and egg goes great in a burrito. These burritos are breakfast style and include homemade chorizo sausage, scrambled eggs, diced potatoes, cheese, cilantro, and salsa. I really enjoy the combination of the egg and salsa. The homemade chorizo combines pork with vinegar and various spices. If you want to save time you can buy pre-made chorizo from the store if you would prefer. If you want to use a different type of cheese, cheddar would be great in place of Monterey Jack. Enjoy.

Chinese roast pork goes great in lo mein. This dish consists of Chinese egg noodles mixed with a sauce, BBQ pork, mushrooms and green onions. If you would prefer you can use your own favorite recipe for the BBQ pork or even make your own in the oven using the recipe here. The sauce gets a lot of flavor from ingredients such as soy sauce and oyster sauce. Garlic and ginger also help to add flavor to this dish. You can use different types of pasta for this recipe—such as linguini if you cannot find Chinese egg noodles. I like to serve this recipe with egg rolls. Enjoy.
