This recipe for homemade chorizo uses simple ingredients, many of which you probably already have on hand. Chorizo is ground pork that is mixed with various spices. In this recipe the ground pork is mixed in a bowl with the spices and cider vinegar. You can adjust the amount of heat in this recipe to your liking by adding more or less red pepper flakes. Cudighi sausage is very popular where I live in the Upper Peninsula of Michigan. This sausage can be found at most pizza or pasty shops or restaurants in the area. Cudighi is a spicy Italian sausage that is commonly made for use in sandwiches or on pizza. This sausage gets a lot of its flavor from seasoning such as cinnamon, nutmeg, and allspice. For the best results, if you have a meat grinder you will want to grind the pork butt yourself but you could also have it done at the meat department or just buy already ground pork. This recipe will make a large quantity of Cudighi. Once you have prepared the sausage you can make it into links, patties or leave it in bulk—it goes great on sandwiches, pizza, and can be used in dishes such as spaghetti. The sandwich pictured above is topped with mozzarella cheese, onions, mushrooms and spaghetti sauce. Homemade cudighi tastes delicious and is a great addition to many dishes. Enjoy.

If you intend to serve the soup immediately, the wontons can be cooked right in the broth. The broth really only consists of chicken stock and sesame oil. You can add additional ingredients to the broth for a little more flavor such as soy sauce. Soy sauce will also give the broth a darker color, if that is what you prefer. The casserole is layered with noodles, the meat mixture and then Monterey jack cheese before being placed into the oven. After the casserole is done baking it is topped off with tomato wedges, sliced jalapeno peppers, and cilantro. One of my favorite appetizers to eat at Chinese restaurants is the pork fried wontons. These wontons are packed full of flavor because of ingredients such as soy sauce and sesame oil. The process to making this recipe is a little time consuming because you need to wrap all of the wontons individually—if you have someone to assist you, it should go a lot faster. Otherwise, this recipe is very easy to prepare. The ground pork is mixed with numerous ingredients and then placed into wontons wrappers. The wontons are then folded and fried in hot oil until fully cooked. If you do not want to use wonton wrappers, pot sticker wraps could work as well. There are a couple of different ways to fold these wontons. You can fold them into triangles like crab Rangoon’s or you can fold them into a bag shape. Making carnitas in the slow cooker is a great idea for a Mexican dinner. If you are not familiar with carnitas, carnitas are basically a Mexican pulled pork that is put under the broiler until the edges are crispy. This dish gets a ton of flavor from the juices that is it cooked in. The pork roast is very seasoned and then lime juice, orange juice, beer and salsa are poured over the roast.
