The Po’ boy originated in Louisiana and consists of a type of meat such as beef or shrimp served on French bread. For this Po’ Boy the type of meat is fried shrimp. The sandwich is loaded with fried shrimp, lettuce, tomato, pickles and a sauce. The shrimp is coated with an egg and flour mixture and then fried in the deep-fryer. The sauce, called Remoulade Sauce, gets a lot of its flavor from ingredients such as mayonnaise, horseradish, and pickle relish. If you do not want to make the sauce, simply using mayonnaise will work as well. The French bread is toasted in the oven to give this sandwich an additional crunch. This recipe goes great served with French fries. Enjoy.
