I prepare to husk the corn before grilling so that it gets nice and brown on the grill. The corn grills for about 10 minutes and then is brushed with mayonnaise and garlic powder and topped off with cotija cheese, chipotle chili powder and chopped cilantro. If you don’t want a lot of spice you can use smoked paprika instead of chipotle chili powder. A squeeze of lime juice adds additional flavor. Enjoy.

If you are looking for a delicious stuffing recipe for the holidays, this one is perfect. I prepared this sausage and herb stuffing for Thanksgiving this year and it was a big hit. This recipe uses pre-made stuffing cubes to help save time and makes this dish easy to prepare. Onions, garlic, and celery are sautéed in butter and then added to the bread cubes along with various ingredients. The sausage is cooked in the same skillet as the celery and onion mixture. KFC Coleslaw
One of the best side dishes at KFC is their coleslaw. With this recipe, you can make your own KFC coleslaw right at home. Not only is this a great copycat recipe but it is perhaps one of the better coleslaws that I have tasted. A lot of the flavor comes from white vinegar, lemon juice, mayonnaise, and buttermilk. For the carrots, I used a cheese grater to shred them but you could also use a knife and slice them into very thin strips. For the best results, you will want to allow the coleslaw to be refrigerated for several hours or overnight to allow the flavor to develop before serving. This coleslaw makes a great side-dish. Enjoy.

Wonton Soup Recipe

  • by

Wonton Soup
One of my favorite soups to get at Chinese restaurants is Wonton soup. Wonton soup consists of wontons that are filled with a pork mixture and then cooked in either chicken broth of water. This recipe cooks the wontons in water because the dish can be served as leftovers. If the soup is allowed to sit the wontons will make the soup cloudy, thick and starchy. If you intend to serve the soup immediately, the wontons can be cooked right in the broth. The broth really only consists of chicken stock and sesame oil. You can add additional ingredients to the broth for a little more flavor such as soy sauce. Soy sauce will also give the broth a darker color, if that is what you prefer. Wonton soup is great to serve for lunch or with any Chinese dinner. Enjoy.

Chicken Caesar Pasta Salad Recipe

chicken caesar pasta salad
Adding pasta to chicken Caesar salad is a nice change from the classic Caesar lettuce salad. This recipe consists of grilled chicken with pasta and lettuce that is tossed with a Caesar salad dressing. The best part about this recipe is, of course, the homemade dressing. The Caesar salad dressing gets a lot of its flavor from ingredients such as lemon juice and minced anchovies. If you do not have a blender to prepare the dressing, whisking the ingredients together in a bowl will work fine. For the chicken, you can grill it or bake it in the oven. If you want to save time, the meat from a cooked rotisserie chicken will also work well. This makes a great cold salad for summer. I like to serve this chicken Caesar pasta salad with garlic bread. Enjoy.

Pork Fried Wantons Recipe

pork fried wontons
One of my favorite appetizers to eat at Chinese restaurants is the pork fried wontons. These wontons are packed full of flavor because of ingredients such as soy sauce and sesame oil. The process to making this recipe is a little time consuming because you need to wrap all of the wontons individually—if you have someone to assist you, it should go a lot faster. Otherwise, this recipe is very easy to prepare. The ground pork is mixed with numerous ingredients and then placed into wontons wrappers. The wontons are then folded and fried in hot oil until fully cooked. If you do not want to use wonton wrappers, pot sticker wraps could work as well. There are a couple of different ways to fold these wontons. You can fold them into triangles like crab Rangoon’s or you can fold them into a bag shape. I like to serve these pork fried wontons with sweet and sour sauce. Enjoy.
